In-store, pickup, takeaway, delivery and dine-in.
Fulfilment is how the goods get to the customer, and each type has its own small lifecycle. A store starts with only in-store selling switched on; the Administrator enables the types the store actually operates in Fulfillment settings.

Delivery is the one type with a failure state — a van that came back tries again without cancelling the order. Dine-in is the one with two middle steps: served means the food reached the table but the party hasn't settled up; see Dine-in & tables.
These fees are minted by the server from the live settings — the checkout can't forget the service charge or invent its own delivery fee.
Fulfilment moves only inside the frame of the other two axes: nothing moves before the order is confirmed, and fulfilment cannot complete before payment does — goods don't leave as delivered on an unpaid order. Both refusals arrive in plain words on the status menu itself.
